Festive Brie and Cranberry Sauce

Ingredients:

400g Frozen or fresh cranberries, (dried won’t work)


200g Brie cheese (makes about 8 big bites)


75g Panko breadcrumbs (I use Mrs. Crimbles Gluten free)

30g flour, (I use Gluten Free)


1 egg (Or 4 tablespoons of Aqua Faba- Chickpea water)

1/2 cup of milk (Or Almond milk)


Vegetable oil for drying


300mls Orange juice


1 Red chilli (optional)


Paprika powder


300g Sugar white (or 100g Stevia- sweetener alternative)


Parsley fresh to scatter (optional)

Method:

Take the sugar and the orange juice and put it in a pan to dissolve on a medium heat. Once this is so, add the cranberries and a chilli, if using, and reduce to a thickened sauce. This should take roughly 15 minutes depending on your desired consistency.

To make the brie, heat enough sunflower or rapeseed oil in a pan on high heat to cover the surface with enough to have the brie half covered when immersed.

Cut a 200g piece into 8/9 pieces.

Get 3 separate containers and add:

1: Flour and add salt and pepper and pinch of paprika powder and mix.

2: Add egg or aqua faba whisked to another bowl
3: Panko bread crumbs to another.

In that order, coat and cover the brie pieces and put them into the hot oil. A few minutes should do it.

Turn when browning, and serve with the cranberry sauce.
