Food Reactions: Lactose, Wheat, Gluten, Yeast and Egg

“Life-changing. I no longer feel like I’m the victim of some mystery illness”

For four years, retired 64-year-old Graham Goldwater struggled with a cycle of debilitating symptoms that seemed to come and go without explanation. Muscle aches, nausea, brain fog, overwhelming exhaustion and periods of complete inertia left him unable to concentrate or even find the energy to get up and do anything. Although he could usually function between flare-ups, when his symptoms struck they could last for up to three weeks, making everyday life feel like a constant battle.

The impact on Graham’s day-to-day life was significant. During his worst episodes, he had to carefully ration his energy, often feeling he could only manage one simple task in a day, whether that was walking the dog or working in the garden. Living with ongoing uncertainty about why he felt so unwell left him increasingly frustrated, and he could feel his quality of life steadily declining.

Everything changed after a wellness check with his physiotherapist. After confirming there was nothing physically wrong with his body, the physiotherapist suggested that Graham’s symptoms could be linked to his diet and recommended YorkTest. Having reached the point where he was willing to try anything, Graham decided to investigate food sensitivities, despite never previously suspecting that food might be the cause of his symptoms.

The results came as a huge shock. Graham discovered sensitivities to lactose, wheat, gluten, cranberry, yeast and eggs. In his own words, he wasn’t just surprised by the findings: he was “horrified.” Nevertheless, he committed fully to eliminating his trigger foods from his diet and embraced the challenge of changing the way he ate.

The improvements didn’t happen overnight, but after around a month Graham noticed the “cloud beginning to lift.” By six weeks, he felt dramatically better. However, an accidental serving of cranberry sauce quickly demonstrated just how significant his sensitivities were. Within three hours, his familiar symptoms returned and persisted for another three weeks, reinforcing just how important it was to avoid his trigger foods. As he continued learning, he also discovered that even small amounts of foods such as milk chocolate or digestive biscuits could trigger the same reaction.

Today, Graham enjoys a far more active lifestyle. He has more energy, is able to tackle more strenuous physical activities and feels healthier overall. While he acknowledges that full recovery was a long journey, taking around a year for his body to feel close to normal again, he remains committed to his diet for life because of the dramatic difference it has made. As someone who enjoys cooking, he found adapting his meals surprisingly enjoyable, embracing Eastern-inspired dishes and taking advantage of the growing range of dairy-free alternatives now available.

Graham also credits YorkTest’s nutritional consultation and Customer Care Team for making the process much easier. The practical dietary advice helped him understand his results and find suitable alternatives, while the follow-up support genuinely surprised him. Most importantly, Graham says he no longer feels trapped by an unexplained illness. Instead, he understands exactly what triggers his symptoms and has regained control over his health—and his life.
