Shortbread Tree Decorations

If you are following a free-from diet and fancy a sweet treat this Christmas, then look no further. We have a recipe that not only looks great but tastes delicious.

 
Ingredients (makes 24)
 
200g dairy free margarine
100g caster sugar
100g corn flour
2 tsp gluten substitute (available online or at supermarket)
200g gluten-free plain white flour
a few drops of cold water to help bind mixture
 
Ribbon for hanging the decoration
Icing for decoration optional


Method

 
Sift all of the dry ingredients into a bowl and mix thoroughly. Rub the margarine until it resembles fine breadcrumbs. Continue rubbing in until the mixture can be formed into a ball. Add a little cold water, if necessary, to bind.
 
Knead lightly, and then roll out onto a well floured work surface so it is at least ½ cm thick all over. Cut into festive shapes and punch a hole at the top of each shape for you to loop the ribbon through.
 
Bake in a preheated oven (200c 400f gas mark 6) for 15 minutes, or until browned. Leave on a baking sheet to cool. Place ribbon through the hanging holes before decorating with icing or sweets
